Chocolate chip cookies
(The ingredients here will make approximately 30)
You will need:
400g plain flour
1 tsp bicarbonate of soda
pinch salt
225g butter, softened
175g caster sugar
175g soft brown sugar
1 tsp vanilla extract
2 eggs
350g good quality dark chocolate chopped
Method:
Preheat oven to 190C
1. Line 3 baking sheets with non-stick paper.
2. Sieve the the flour, baking soda and salt into a bowl.
3. Using a mixer, beat the butter, sugar, brown sugar and vanilla extract until creamy.
Beat in the eggs.
4. Gradually add in the flour mixture and stir in the chocolate.

Hide Ad5. Split the dough into two halves, rolling each into sausage shapes, approximately 4 cm in diameter. Wrap them in cling film and place in the fridge until firm.
6. When you are ready to bake the cookies, simply cut the log into slices 2cm thick and lay on the baking tray, widely spaced apart. Bake for 9-11 minutes until golden. Allow to cool on the tray for a few minutes (to crisp up) before transferring to a cooling tray.
Cook’s Tip: The dough can be frozen (in the log shape) and, when required simply defrost and cut into slices as described.
